Allium cepa Onions are among the oldest cultivated crops, originating in the mountain valleys of Asia and the Middle East, and are perhaps the most called upon vegetable ingredient in any cookbook. Species ‘cepa’ includes all the common bulbing type onions, and some green onions. Species ‘fistulosum’ are perennial scallion type onions that never form true bulbs, but can be grown either as a quick green onion with close spacing, or as wider spaced transplants that will grow into clumps of cut-and-come-again green onions.
