Cichorium endiva A close relative to Chicory, having similar flavor and culture, but often with frillier leaves, less cold hardiness, and usually lacking red pigments. Leaf shapes range from triple-cut Frisée, through pinnately dissected leaves with frilled edges (the Endives), to large romaine-like wrappers, usually called Escarole. Essential to real mesclun.
