Foeniculum vulgare A feathery-leafed anise-flavored umbel, perennial where winters stay above 10°F. Young leaves and tender petioles from mature plants are excellent salad additions, as are emerging flower buds and stems. “Bulbing” (finocchio) types are bred for their swollen petioles that are used as a salad or vegetable. These are less hardy, and are planted in mid-spring or thereafter to avoid bolting. A terrific species for attracting and feeding beneficial insects.
